"The key to great food is being honest with yourself and what you can achieve; there are many ways to prepare a great dish but only one way to do it right. This is achieved in many stages, but it starts with fresh, local, sustainable foods brought to our kitchen from our local farmers and fish mongers. My duties as a chef are to search for those ingredients and utilize them in their purest form to surpass our guests’ expectations. To properly execute the perfect meal, we must have a team of people, both in the kitchen and in the dining room, that share the same values. We set a standard and we can not fall below that standard. It is about commitment."
